

Bush Tomato Soup Recipe
Bush Tomato adds sweet enticing caramel flavour, similar to sundried tomatoes to this simple recipe. Sourced from Indigenous Communities in Central Australia, our Bush Tomato is not only flavoursome but also healthy. It is rich in antioxidants, much higher than more commonly eaten berries. It also contained a unique mineral which is important in metabolic functioning - selenium. Bush tomatoes also contain iron, calcium, zinc, folate, and a range of other essential nutrients.

Ingredients:
500g of flavoursome tomatoes
Sprig of Sea Parsley (optional)
2 tbsp of virgin olive oil
1 clove garlic
2 small brown onions finely chopped
1 tbsp tomato paste
1-2 tsp finely ground Bush Tomato
Dissolved into hot water to be used as stock
Method
1. Heat oil in a saucepan. Add garlic and onion. Stir gently over heat for 2-3 mins. Add tomatoes and other ingredients.
2. Bring to boil and then allow to simmer for 20-30 mins. Cary out taste test along the way and add extra ground Bush Tomato to suit required taste
3. To give a cuisine look, add sour cream or yoghurt before serving, with a sprig of Sea Parsley
