Spaghetti Bolognese with Chorizo and Bush Tomato

Tried spaghetti served with a sauce of minced beef, Bush Tomato, onion, and herbs? Cause you’re about to! If not anything else, you’ll appreciate the distinctively raisin or caramel flavour of bush tomato. The strong spicy after taste will keep you coming back for more.

Ingredients:

Method:

500g Lean Minced Beef
400g Canned Chopped tomatoes 
250g Stick Chorizos (chop these into cubes)
200 ml Red Wine
150 ml Beef Stock
2 tbsp Bush Tomato
1 Large Onion, finely chopped
1 Carrot (finely chopped)
1 handful of sea celery leaves
4 Garlic Cloves, crushed
1 tbsp dried basil
1 tsp dried Native Oregano (or oregano)
1 tsp salt
1 tsp pepper

Parmesan cheese, grated

1. Heat the pan on low heat. Add chorizo and continue to heat until the oil turns red. Add onion, carrots and Sea Celery.

2. Add the lean minced beef and cook until browned.

3. Add chopped tomatoes, wine, beef stock, Bush Tomato, basil, Native Oregano, salt and pepper.

4. Mix well and simmer for 1hr 30min. Occasional stirring is recommended.

Serve with spaghetti and a generous serve of parmesan.
